White BitterGourd (Japan)

One of the purest white bittergourd varieties that resembles elegant white pearls found off the coast of Okinawa.
 
This extra-large (8-10 inches) and mild Japanese bittergourd bears pearly white, mellow-flavored fruit. Its refined, less bitter flavor is still quite nutritionally potent and health promoting. Interestingly, the bittergourd does develop a sweetness as it ripens.
